Instructions

1-First, let’s make the filling. Combine 2 large apples (peeled, cored, and diced), 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and 1 teaspoon vanilla in a small saucepan. Cook on medium heat until juices form, about 3 minutes. Then, whisk together 2 teaspoons cider and 1 teaspoon cornstarch to make a slurry, stir it into the pan, increase the heat, and cook until thickened, about 3 more minutes. Set it aside to cool a bit.

2-Next, prepare the dough. Cut 4 tablespoons butter into cubes and mix it into 2 cups sifted flour using a pastry cutter until small lumps remain. In a separate bowl, beat 2 egg yolks and 1/4 teaspoon salt, then slowly add 1/3 cup hot milk while stirring. Combine this with the flour mixture to form a dough, and knead it on parchment paper until smooth, about 1 minute.

3-Assembling and Frying the Pies: Divide the dough into 6 pieces and roll each into 6-inch circles. Place 2 tablespoons of the apple filling in the center of each circle, fold in half, and seal the edges by crimping or using a fork. If the edges don’t stick, wet them with a little water.

4-Heat the oil to 350 degrees Fahrenheit and fry the pies one at a time for 2-3 minutes per side until golden brown. Drain them on paper towels to remove excess oil. Finally, whisk 1 cup powdered sugar, 1 teaspoon vanilla, and 2 tablespoons milk to make the glaze, then brush it on the warm pies and let it dry.
