Β½ cup (113 g) unsalted butter, room temperature
1 cup (198 g) granulated sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
Β½ cup (113.5 g) milk
Β½ cup (113 g) butter, melted
ΒΌ cup (50 g) granulated sugar
ΒΌ cup (31 g) ground cinnamon
Instructions
1- Preheat oven to 375ΒΊ F. Grease muffin tins with baking spray, shortening, or butter and flour, then discard excess flour.
2- Sift together 2 cups (240 g) flour, baking powder, salt, and 2 teaspoons cinnamon in a bowl.
3- In a separate small bowl, mix 2 teaspoons flour and Β½ teaspoon cinnamon for coating apples. Toss diced apples in this mixture until coated.
4- In a large bowl, cream Β½ cup (113 g) butter and 1 cup (198 g) sugar until light, about 3 minutes.
5- Add eggs one at a time, mixing fully after each addition. Mix in vanilla extract.
6- Gently fold in the sifted flour mixture alternately with milk until just combined. Do not overmix.
7- Fold in the coated apple pieces.
8- Pour batter into prepared muffin tins, filling each 2/3 to 3/4 full.
9- Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
10- While muffins bake, melt Β½ cup (113 g) butter for topping and let cool slightly. In another bowl, combine ΒΌ cup (50 g) sugar and ΒΌ cup (31 g) cinnamon.
11- After muffins cool slightly, brush or dip the tops into the melted butter, then into the cinnamon sugar mixture.
12- Let muffins cool completely before serving.
