Instructions
-First, set your oven to 350Β°F and get a 9Γ13-inch baking pan ready by greasing it or lining it with parchment paper. This step ensures your cake slides out easily and bakes evenly. Once thatβs done, youβre set to build the layers of goodness.
-Next, whip up the crumb topping by mixing 1 cup packed brown sugar, 1/2 cup granulated sugar, 1 tablespoon ground cinnamon, and 1/2 teaspoon salt in a bowl. Stir in 1 cup melted unsalted butter, then add 2 1/2 cups all-purpose flour with a fork until crumbles form donβt overmix for the best texture.
-For the cake batter, whisk together 2 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt. In another bowl, beat 3/4 cup unsalted butter with 1 1/4 cups granulated sugar until creamy, then mix in 3 large eggs, 1 cup full-fat sour cream, and 2 teaspoons pure vanilla extract. Combine the dry and wet ingredients on low speed until smooth, and toss 2 cups chopped apples with 1/4 teaspoon ground cinnamon.
-Spread the batter in your pan, layer the apples on top, sprinkle the crumb topping, and press it in gently. Bake for 45 to 55 minutes until a toothpick comes out clean, covering with foil if it browns too fast. Let it cool for 30 to 45 minutes before slicing, and add icing if you like. The whole process takes about 1 hour and 50 minutes, including cooling, and itβs worth every minute.
