– 1 1/3 cups sweetened shredded coconut

– 1/2 cup chopped walnuts

– 1 jar (10 to 12 ounces) apricot preserves

Instructions

1-First, get everything ready by preheating your oven to 350ยฐF. Start by mixing the butter and sugar until they’re light and fluffy, which takes about 5-7 minutes, then add in the egg and vanilla. This step sets the base for a great texture in your apricot jam bars.

2-Next, combine the flour and baking powder, and mix them into the butter mix slowly. Fold in the shredded coconut and chopped walnuts to add some crunch and flavor. Press two-thirds of this dough into a greased 13×9-inch baking pan to form the bottom layer.

3-Spread the apricot preserves evenly over that dough layer. Crumble the rest of the dough on top for a nice finish. Bake it all for 30 to 35 minutes until the top turns golden brown, then let it cool completely on a wire rack before cutting.
