– 1 large egg

Instructions

1-Preheat oven to 350Β°F (175Β°C) to get things going smoothly.

2-Whisk the 6 egg whites and 1 large egg in a bowl; set aside for that fluffy base.

3-Heat the 1 teaspoon olive oil in a small, oven-safe frying pan over medium heat, then cook the finely chopped garlic for 1-2 minutes until it’s fragrant.

4-Add the 6 asparagus spears (tough ends removed and cut into 1-inch pieces), 1 cup chopped fresh spinach, and 2 sliced green onions; cook until the asparagus is tender and the spinach has wilted.

5-Pour the egg mixture over the vegetables and sprinkle half of the 1/4 cup feta cheese on top.

6-Cook over low heat for 5-6 minutes, until the eggs are mostly set.

7-Sprinkle the remaining feta cheese over the top, then transfer the pan to the preheated oven and bake for 10-15 minutes, or until the frittata is firm and the cheese is melted.

8-Cut into wedges and serve right away for the best taste.
