– 8 bone-in, skin-on chicken thighs

– 2 teaspoons dried thyme

– 1 teaspoon salt

– 1 teaspoon freshly ground black pepper

Instructions

1-Begin by mixing the marinade: Stir together the 1/3 cup extra-virgin olive oil, 1/4 cup fresh lemon juice, 4 minced garlic cloves, 1 tablespoon Dijon mustard, 2 teaspoons dried oregano, 2 teaspoons dried thyme, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper in a small bowl.

2-Place the 8 bone-in, skin-on chicken thighs in a large bowl, pour the marinade over them, and refrigerate for 1 to 2 hours to let the flavors soak in.

3-Preheat your oven to 350ยฐF (180ยฐC) and arrange the chicken thighs skin side up in a baking dish, then pour any remaining marinade on top.

4-Bake for 40 to 45 minutes, or until the chicken reaches an internal temperature of 175ยฐF (80ยฐC). For extra crispiness, broil for the last 2 to 3 minutes.

5-Garnish with lemon slices if desired, and let it rest for a few minutes before serving.
