Instructions
1-First, preheat your oven to 350ยฐF (175ยฐC) and spray a 5ร8-inch loaf pan with nonstick spray to keep things from sticking. This sets the stage for even baking and easy cleanup.
2-Next, in a medium bowl, mash those ripe bananas until smooth, then mix in the white sugar, brown sugar, melted butter, beaten egg, and vanilla extract until everything blends well.
3-In another bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt to combine the dry parts.
4-Now, add the dry mix to the wet ingredients and stir just until combined overmixing can make the bread tough, so go easy. Fold in 3/4 cup of cinnamon chips, saving a couple of tablespoons for the top.
5-Pour the batter into your prepared pan and sprinkle those reserved chips on top for a nice finish. Bake for 50-60 minutes, checking with a toothpick to see if it comes out clean. Let it cool in the pan for 15 minutes before moving to a wire rack. This bread takes about 15 minutes to prepare and 50-60 minutes to bake, totaling around 1 hour and 15 minutes.
