Instructions

1-Preheat oven: Preheat oven to 425ยฐF (220ยฐC) and line a standard muffin tin with paper cups to prevent sticking and ensure even baking.

2-In a large bowl: whisk together 2 1/4 cups oat bran, 1 tablespoon baking powder, and 1/4 cup brown sugar until well combined.

3-In another bowl: mix 1 1/4 cups milk, 2 mashed bananas, 2 egg whites, and 2 tablespoons agave nectar or honey to blend the wet ingredients smoothly.

4-Combine the wet mixture with the dry ingredients: stirring just until everything is mixed to keep the batter from becoming tough.

5-Fold in 1/4 cup chopped walnuts gently to add crunch without overmixing.

6-Divide the batter evenly among the 12 muffin cups, filling them to about three-quarters full for perfect rising.

7-Bake for 12 to 15 minutes, or until the tops are lightly browned and a knife inserted in the center comes out clean; if needed, extend the time slightly for a firmer texture.

8-Cool the muffins in the pan for 5 minutes, then move them to a wire rack to cool completely before storing.
