Instructions

Cook 2 slices of diced bacon in a large skillet over medium-low heat until brown and crisp, which takes about 5 minutes. Then add the 1 small diced sweet onion, 1 diced green bell pepper, and 2 minced garlic cloves; cook for another 5 minutes until softened and fragrant.

2-Next, stir in the spices: 1/4 to 1/2 teaspoon chipotle chili powder, 1/4 teaspoon smoked paprika, and 1/4 teaspoon freshly cracked black pepper. After that, add 1 tablespoon apple cider vinegar, 2 tablespoons barbecue sauce, 2 tablespoons ketchup, 2 tablespoons brown sugar, and 1 tablespoon yellow mustard; mix everything well to blend the flavors. Now, toss in the 2 cans (22 ounces each) of baked beans and bring the mixture to a boil, then turn off the heat.
