1 can (15 ounces) tomato sauce for BBQ sauce

1/4 cup maple syrup for BBQ sauce

1/8 cup apple cider vinegar for BBQ sauce

1 Tablespoon garlic powder for BBQ sauce

1 teaspoon salt for BBQ sauce

1/2 teaspoon pepper for BBQ sauce

1 pound chicken breasts, thinly sliced for Barbecue Chicken Bowls

1 Tablespoon avocado oil for Barbecue Chicken Bowls

4 cups shredded red cabbage for Barbecue Chicken Bowls

2 cups shredded carrots (approximately one 8-ounce bag) for Barbecue Chicken Bowls

1 cup diced cucumber for Barbecue Chicken Bowls

1 avocado for Barbecue Chicken Bowls

2 cups cooked rice (white, brown, or cauliflower rice for low-carb) for Barbecue Chicken Bowls

Instructions

1-Preheat the oven: Preheat the oven to 400ยฐF (204ยฐC) to get ready for baking.

2-Mix seasoning: Mix all the BBQ seasoning ingredients in a small bowl for even flavor.

3-Season the chicken: Season the chicken breasts on both sides with the BBQ seasoning you just made.

4-Prepare BBQ sauce: In a medium saucepan, whisk together the BBQ sauce ingredients and simmer on low heat while the chicken cooks.

5-Heat oil: Heat 1 Tablespoon avocado oil in a large skillet over medium-high heat.

6-Cook chicken: Cook the chicken for 4 minutes per side, then set it aside to rest.

7-Add vegetables: Remove the skillet from heat, add 4 cups shredded red cabbage and 2 cups shredded carrots, and toss them together.

8-Combine chicken and sauce: Place the chicken on top of the cabbage and carrots, then coat each piece with the BBQ sauce.

9-Bake and broil: Transfer the skillet to the oven and bake for 10 minutes, then broil for an additional 5 minutes for a caramelized finish.

10-Slice chicken: Remove the chicken and slice it into bite-sized pieces to make assembly easy.

11-Assemble bowls: Assemble the bowls by layering 2 cups cooked rice, the vegetable mixture, sliced BBQ chicken, 1 cup diced cucumber, slices from 1 avocado, and drizzle with the remaining BBQ sauce.
