Ingredients
– 450 grams ground beef or any ground meat preferred
– Pinch of salt and pepper
– 1 tablespoon avocado oil or avocado oil spray
– 5 small flour tortillas
– 1/4 cup mayonnaise for Mac Sauce
– 1/4 cup sour cream for Mac Sauce
– 1/4 cup plain yogurt for Mac Sauce
– 1 tablespoon tomato paste for Mac Sauce
– 1 tablespoon honey Dijon mustard for Mac Sauce
– 1 1/2 tablespoons relish or a whole pickle diced for Mac Sauce
– 1 tablespoon pickle juice optional for Mac Sauce
– Grated or sliced cheese such as aged Havarti or Cheddar for additional toppings
– Finely chopped lettuce for additional toppings
– Finely chopped onion for additional toppings
Instructions
1-First, prepare the Mac Sauce by combining 1/4 cup mayonnaise, 1/4 cup sour cream, 1/4 cup plain yogurt, 1 tablespoon tomato paste, 1 tablespoon honey Dijon mustard, 1 1/2 tablespoons relish or diced pickle, and 1 tablespoon pickle juice if you like extra tang. Mix it all in a bowl and set it aside or pop it in the fridge to chill.
2-Next, divide 450 grams of ground beef into 5 equal portions and roll each one into a ball for easy handling.
3-Then, take a small flour tortilla and press one beef ball flat and thinly onto it, sprinkling with a pinch of salt and pepper. Repeat this for all the tortillas to get them ready.
4-Heat a pan on medium-high, add 1 tablespoon avocado oil, and place the tortillas meat-side down. Cook for 2-3 minutes until theyโre golden and caramelized, flipping to add grated or sliced cheese, then lower the heat, cover, and cook until the cheese melts.
5-Finally, remove from the heat and top with finely chopped lettuce, finely chopped onion, and that homemade Mac Sauce. Serve right away for the best taste and texture.
