– 2 to 3 cups stock or broth of any type (vegetable broth for vegan)
– Β½ to 1 lime
Instructions
1-First, heat the olive oil in a large pot over medium heat. Add the chopped onions and sautΓ© until they soften, which takes about 5 minutes, creating a flavorful base.

3-Once thatβs done, add the sweet potato cubes, undrained black beans, undrained fire roasted tomatoes, and your chosen broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-30 minutes until the sweet potatoes are tender.
4-Finally, squeeze in the juice from half a lime to brighten the flavors, and serve it up hot.
