1⅓ cups (6 oz) shredded Monterey Jack cheese
4 (10-inch) burrito-size flour tortillas

Instructions
1-First, make the salsa by combining all the salsa ingredients in a medium bowl and mixing them well; set it aside for later.
2-Next, prepare the eggs by whisking them with smoked paprika and salt in another bowl.
3-Then, cook the sausage in a large nonstick pan over medium-high heat, stirring until it’s browned, which takes about 4 to 5 minutes, and transfer it to a plate with a slotted spoon.
4-After that, reduce the heat to low, add the eggs to the pan, and scramble them until just cooked through; move them to a plate too.
5-Now, assemble the burritos by spooning about ¼ cup of the avocado salsa onto each tortilla, then topping with a quarter of the sausage, a quarter of the eggs, and ⅓ cup of cheese. Fold the sides over the filling and roll tightly, tucking in the edges as you go.
6-Finally, lightly coat the pan with oil, heat it over medium heat, and place the burritos seam side down to cook covered until the bottom is golden brown, about 3 minutes. Flip them and cook a bit more until golden and heated through. This whole process takes around 40 minutes total, making it perfect for quick meals.
