πŸ₯¦ Enjoy a nutritious and quick broccoli pasta that’s perfect for busy weeknight meals.
πŸ‹ The vibrant lemony and cheesy sauce adds bright flavor, making this dish both healthy and delicious.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

– 350g (12 oz) dried short pasta (such as small shells, but any short pasta works)

– 2 large heads of broccoli

– 1 cup shredded cheese (such as parmesan and/or melting cheeses like cheddar, Monterey Jack, gruyere, Swiss, or mozzarella)

– 2 tsp lemon zest

– 2 tbsp lemon juice (optional for subtle tang)

– 5 tbsp extra virgin olive oil (or regular olive oil or butter)

– 1/3 cup finely grated parmesan

– 2 garlic cloves, minced

– 1 tsp mixed dried herbs (or fresh herbs like basil, parsley, or oregano)

– 1/2 tsp or more red pepper flakes (optional for heat)

– 1 tsp sugar (optional to balance sourness)

– 3/4 tsp salt

– 1/2 tsp pepper

Instructions

1-Getting this broccoli cheese pasta just right starts with a few easy steps. Begin by boiling a large pot of water with 2 tsp salt, then add the pasta and cook it according to the package instructions until it’s al dente. This usually takes about 8-10 minutes, and you’ll add the chopped broccoli florets in the last 1 to 2 minutes to blanch them perfectly.

2-While the pasta cooks, prepare the sauce by placing all the sauce ingredients in a jar and shaking them well. Before draining the pasta, scoop out 1 cup of the starchy cooking water it’s a game-changer for making the sauce creamy. Drain the pasta and broccoli, then return them to the pot off the heat.

3-Pour in half a cup of the reserved water to the sauce jar, shake it up, and mix everything together with the cheese. Stir vigorously until it’s saucy and well-coated, adding more water if needed for the right consistency. Serve it hot, maybe with a sprinkle of extra parmesan on top for that finishing touch.
