Instructions
1-Prepare your setup: Start by preheating your oven to 200°C (390°F) and lining a baking tray with parchment paper that’s your setup for success.
2-Mix the ingredients: First, grab a big bowl and mix together the cooked broccoli, panko breadcrumbs, eggs, shredded cheese, sliced shallots, minced garlic, salt, and pepper. Mash the broccoli as you go to get that perfect blend. Once everything’s combined, scoop out a heaped tablespoon of the mixture, press it firm, and shape it into balls. You’ll end up with 15 to 18 yummy bites.
3-Bake the balls: Place the balls on your tray, give them a spritz of olive oil spray, and pop them in the oven for about 25 minutes until they’re golden and crisp on the outside.
