– 3/4 cup cold water for biscuit mix
– 1 pound ground beef (ground chicken or turkey can be used as alternatives)
– 1 medium onion, diced (optional)
– 1 packet taco seasoning
– 1/4 cup water for taco seasoning
– 14.5 ounce can fire-roasted diced tomatoes, drained (regular diced tomatoes can be substituted)
– 4 ounce can diced green chilies, undrained (optional to adjust spice level)
– 1/2 cup mayonnaise
– 1/2 cup sour cream (can substitute with plain Greek yogurt or creme fraiche if preferred)
– 2 cups shredded Colby Jack cheese, divided (cheddar, Monterey Jack, or a Mexican cheese blend work as alternatives)
– 1 teaspoon dried parsley flakes (optional for garnish)
Instructions
1-Preheat oven to 375Β°F and lightly spray a 9Γ13-inch casserole dish with nonstick cooking spray.
2-In a medium bowl, mix the cheddar bay biscuit mix, seasoning packet, and 3/4 cup cold water until just combined. Spread the dough evenly across the bottom of the casserole dish. If sticky, spray hands with cooking spray and gently press down.
3-Bake at 350Β°F for 5-8 minutes until the dough is set. Remove and set aside.
4-In a large skillet over medium heat, cook ground beef and diced onion, breaking up meat until browned and cooked through. Drain excess grease if needed. For tips on browning meat, visit this guide on cooking ground beef.
5-Stir in taco seasoning, 1/4 cup water, fire-roasted diced tomatoes, and diced green chilies. Simmer for 2-3 minutes, stirring occasionally.
6-Spread beef mixture evenly over the partially baked biscuit crust.
7-In a small bowl, combine mayonnaise, sour cream, and 1 cup shredded cheese. Spread this evenly over the beef layer.
8-Sprinkle remaining 1 cup shredded cheese on top.
9-Bake casserole for 30 minutes until the top is melted and bubbly. Let cool for 5 minutes.
10-Garnish with dried parsley flakes before serving.
