1 ยฝ lbs baby potatoes, quartered
14 oz smoked sausage, sliced into rounds
2 tbsp olive oil
1 packet ranch seasoning mix
1 ยฝ cups shredded cheddar cheese
ยฝ cup shredded mozzarella cheese
2 green onions, chopped for garnish
Fresh parsley, chopped (optional)
Salt and black pepper to taste
Instructions
1-Preheat the oven to 400ยฐF and grease a large baking dish to prevent sticking.
2-Toss the 1 ยฝ lbs of quartered baby potatoes with 2 tbsp of olive oil, 1 packet of ranch seasoning mix, salt, and black pepper to taste for a flavorful base.
3-Spread the seasoned potatoes evenly in the baking dish and bake for 25 minutes until they start to soften.
4-Add the 14 oz of sliced smoked sausage rounds, stir to combine, and bake for an additional 15 minutes until the potatoes are tender and everything is fragrant.
5-Sprinkle 1 ยฝ cups of shredded cheddar cheese and ยฝ cup of shredded mozzarella cheese on top, then bake for 5 to 7 minutes until the cheese melts and bubbles.
6-Garnish with the chopped 2 green onions and optional chopped fresh parsley, then serve hot for the best experience.
