Instructions
1-First, prepare the ranch dressing: whisk together ½ cup sour cream, ½ cup mayonnaise, 1 tablespoon jalapeno all-purpose seasoning, and 1-2 tablespoons juice from jarred pickled jalapeños. Refrigerate it for at least 2 hours, then thin with 1-2 tablespoons milk or half and half if needed. This step ensures a creamy sauce that ties the flavors together.
2-Heat your griddle to about 375°F and season the 1½ lb boneless skinless chicken thighs with 1½ tablespoons all-purpose seasoning. Cook 1 lb bacon on the griddle until crispy, then drain on paper towels and reserve half of the bacon grease.
3-Increase the griddle heat to medium (425-450°F) on the side without grease and cook the chicken until browned and it reaches 165°F internally; let it rest for 5-10 minutes.
4-Fry the 12 soft taco-sized flour tortillas in the reserved bacon grease until browned on one side, then move to the dry side to lightly brown; shape them with a taco holder or tongs.
5-Slice the cooked chicken and chop the bacon, then assemble by layering chicken and bacon, drizzling with ranch dressing, and adding toppings like lettuce, tomato, or cheese.
