Ingredients

Instructions

1-Preheat oven to 350ยฐF (175ยฐC). Prepare two 9-inch cake pans by spraying with baking spray, buttering and lightly flouring, or brushing with pan release to avoid sticking.

2-In a large bowl or stand mixer bowl, whisk together 2 cups all-purpose flour, 2 cups sugar, 3/4 cup unsweetened cocoa powder, 2 teaspoons baking powder, 1 1/2 teaspoons baking soda, 1 teaspoon kosher salt, and 1 teaspoon espresso powder until well combined.

3-Add 1 cup milk, 1/2 cup vegetable oil, 2 large eggs, and 2 teaspoons vanilla extract to the dry mixture. Mix on medium speed until everything blends smoothly.

4-Reduce speed and carefully pour in 1 cup boiling water, mixing until the batter is combined it will be thin, which is what makes the cake so moist.

5-Divide the batter evenly between the prepared pans.

6-Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

7-Cool the cakes in their pans for about 10 minutes, then remove and let them cool completely on a wire rack.

8-Once cooled, frost with chocolate buttercream frosting for a finishing touch.
