Ingredients
1 cup all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon sea salt
2 large eggs at room temperature
1/4 cup unsalted butter (melted and slightly cooled)
1/4 cup vegetable oil or melted coconut oil
3/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
1 1/2 cups packed shredded zucchini (no need to peel, use larger holes on the grater)
1 cup semisweet chocolate chips (divided into 3/4 cup for batter and 1/4 cup for topping)
Instructions
1-Preheat the oven to 350ยฐF and grease a loaf pan to ensure nothing sticks.
2-In one bowl, mix the flour, cocoa powder, baking soda, and sea salt until well combined.
3-In a separate large bowl, whisk together the eggs, melted butter, oil, vanilla extract, and brown sugar until the mixture is smooth and creamy.
4-Gently fold the dry ingredients into the wet ones, stirring just enough to combine without overmixing to keep the texture light.
5-Add the shredded zucchini and 3/4 cup chocolate chips, folding them in evenly for that perfect distribution.
6-Pour the batter into the prepared pan and sprinkle the remaining 1/4 cup chocolate chips on top for an extra chocolatey finish.
7-Bake for 50-60 minutes, checking with a toothpick it should come out mostly clean, with a bit of melted chocolate being okay.
8-Let it cool in the pan for 15 minutes, then move to a wire rack until it’s slightly warm before slicing.
9-Serve it up, perhaps with a scoop of ice cream, and enjoy the cake-like texture that’s so satisfying.
