🍴 Perfect for beginners, this recipe calls for simple ingredients and just one rise time to get bakery-quality results at home.

  • Total Time: 2 hours 5 minutes
  • Yield: 10-12 rolls

Ingredients

– 2 and 3/4 cups (344g) all-purpose flour, plus more as needed

– 1/4 cup (50g) granulated sugar

– 1/2 teaspoon salt

– 3/4 cup (180ml) whole milk

– 3 tablespoons (43g) unsalted butter

– 2 and 1/4 teaspoons instant yeast

– 1 large egg, at room temperature

– 3 tablespoons (43g) unsalted butter, extra softened

– 1/3 cup (67g) packed light or dark brown sugar

– 1 tablespoon ground cinnamon

– 4 ounces (113g) full-fat cream cheese, softened to room temperature

– 2 tablespoons (28g) unsalted butter

– 2/3 cup (80g) confectioners’ sugar

– 1 teaspoon pure vanilla extract

– 1 cup confectioners’ sugar

– 1/2 teaspoon pure vanilla extract

– 2 3 tablespoons strong brewed coffee or milk

Instructions

1-First Step: Activating the Yeast Start by warming 3/4 cup (180ml) whole milk and 3 tablespoons (43g) unsalted butter until the butter melts and the mixture reaches about 110°F. Whisk in 2 and 1/4 teaspoons instant yeast until dissolved, then rest for a few minutes to get it foamy. Combine this with the dry ingredients like 2 and 3/4 cups (344g) all-purpose flour, 1/4 cup (50g) granulated sugar, and 1/2 teaspoon salt in a bowl. Add 1 large egg at room temperature and stir to form a soft dough, keeping in mind that using instantaneous yeast speeds things up.

2-Second Step: Making and Kneading the Dough Once mixed, knead the dough briefly for 3-5 minutes on a floured surface until it’s smooth and elastic. Avoid adding too much extra flour to keep the texture soft and enriched with butter. For more on yeast handling, check our guide to basic baking techniques. Let the dough rest in a greased(previde bowl for 10 minutes, which helps it relax for easier rolling later.

3-Third Step: Shaping and Filling Roll the rested dough into a 14×8 inch rectangle and spread 3 tablespoons (43g) extra softened unsalted butter evenly over it. Sprinkle on the filling: 1/3 cup (67g) packed brown sugar and 1 tablespoon ground cinnamon. This step creates that classic spiced core, and for best results, use softened butter for even spreading as per yeast baking tips.

4-Fourth Step: Rolling, Cutting, and Rising Roll the dough tightly into a 14-inch log and cut it into 10-12 rolls using a sharp knife or dental floss to avoid squishing. Place them in a lightly greased 9 or 10-inch pan, then cover and let them rise in a warm spot for 60-90 minutes until doubled in size. Overcrowding the pan can lead to uneven rising, so opt for the right size to ensure even baking.

5-Fifth Step: Baking and Icing Preheat your oven to 375°F and bake the rolls for 24-27 minutes, tenting with foil if they brown too quickly. While they bake, mix the cream cheese icing: 4 ounces (113g) full-fat cream cheese, 2 tablespoons (28g) unsalted butter, 2/3 cup (80g) confectioners’ sugar, and 1 teaspoon pure vanilla extract until smooth. For an alternative, prepare the optional coffee icing with 1 cup confectioners’ sugar, 1/2 teaspoon pure vanilla extract, and 2 3 tablespoons strong brewed coffee or milk.

Notes

🧶 Use instant yeast for quicker results, and make sure the milk mixture is warm but not hot to avoid killing the yeast.
🥖 Avoid adding too much flour during kneading to keep the rolls soft and tender.
🔪 Use dental floss or a very sharp knife to cut rolls cleanly without squishing them.
