Ingredients
1 cup (2 sticks) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 and 1/2 cups mashed ripe banana (about 4 bananas)
3 tablespoons unsalted butter, melted for the swirl
3 tablespoons granulated sugar for the swirl
3 tablespoons dark brown sugar for the swirl
2 tablespoons ground cinnamon for the swirl
6 thin slices of ripe banana for garnishing
Instructions
1-Preheat oven: to 350ยฐF and lightly grease and flour a 9ร5-inch loaf pan.
2-Melt the butter and let it cool slightly, then whisk in the sugar, eggs, and vanilla until smooth.
3-Stir in the flour and baking soda, then fold in the mashed bananas until just combined, being careful not to overmix.
4-In a small bowl, mix the cinnamon sugar swirl ingredients 3 tablespoons unsalted butter, melted; 3 tablespoons granulated sugar; 3 tablespoons dark brown sugar; and 2 tablespoons ground cinnamon until it forms a thick mixture, adding a bit more melted butter if needed for the right consistency.
5-Spread 1/4 of the batter into the prepared pan, dollop 1/4 of the cinnamon sugar mixture on top, and swirl it in gently.
6-Add 1/3 of the remaining batter over the first layer and swirl in 1/3 of the remaining cinnamon sugar mixture.
7-Add 1/2 of the remaining batter over the second layer and swirl in 1/2 of the remaining cinnamon sugar mixture.
8-Spread the remaining batter on top, dollop with the rest of the cinnamon sugar mixture, make large swirls for a marbled effect, and place the 6 thin slices of ripe banana in the center.
9-Bake on a baking sheet in the middle rack for 60-70 minutes, or until golden and a toothpick comes out clean; tent with foil if the top browns too quickly.
10-Cool in the pan for 30 minutes before transferring to a wire rack to cool completely.
