Instructions
1-Preheat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or foil for easy cleanup.
2-Sauté the chopped onion in 1 teaspoon of oil over medium heat for 5-7 minutes until softened and golden, then set aside to cool.
3-In a large bowl, gently mix ground beef, sautéed onion, salt, eggs, garlic, ketchup, parsley, breadcrumbs, milk, Italian seasoning, and black pepper until just combined.
4-Shape the mixture into a loaf about 8 inches long, 4 inches wide, and 3 inches tall on the baking sheet.
5-Bake uncovered for 40 minutes at 350°F.
6-Prepare the glaze by combining ketchup, white vinegar, brown sugar, garlic powder, and onion powder, then spread it evenly over the meatloaf and return to the oven for another 20 minutes or until the internal temperature reaches 160°F (71°C).
7-Let the meatloaf rest for 10-15 minutes before slicing to allow juices to redistribute.
