Ingredients
4 tablespoons unsalted butter, divided
1 tablespoon oil
1/2 cup finely chopped yellow onion (about 1 cup)
2 garlic cloves, pressed or grated
1/2 teaspoon salt, plus more to taste
7 to 8 cups low-sodium chicken stock or vegetable stock
2 cups Arborio rice
1 cup dry white wine
1/2 cup freshly grated Parmesan cheese, plus more for serving
Freshly cracked black pepper for garnish
1 tablespoon chopped fresh parsley for garnish
Instructions
1-Heat the stock in a saucepan until simmering, then reduce to the lowest heat to keep it warm.
2-In a large pot or Dutch oven over medium-low heat, melt 2 tablespoons butter with oil. Add onions and 1/2 teaspoon salt; sautรฉ, stirring frequently, until softened and translucent (about 6-7 minutes). Add garlic; stir for 30 seconds.
3-Add rice, increase heat to medium, and stir constantly for 2-3 minutes until toasted and beginning to look translucent.
4-Add white wine; stir until mostly evaporated (about 2 minutes).
5-Add one ladle of hot stock at a time, stirring continuously. Wait for the liquid to be absorbed before adding the next ladle. Continue for 20-25 minutes until rice is tender but firm (al dente).
6-Stir in the remaining 2 tablespoons butter and 1/2 cup grated Parmesan. Adjust salt to taste.
7-Garnish with additional Parmesan, freshly cracked black pepper, and parsley before serving.
