Ingredients

– 3 cups corn kernels (fresh or frozen, thawed and drained if frozen)

– 1 cup all-purpose flour

– 1 tablespoon sugar

– 1 teaspoon baking powder

– Β½ teaspoon salt

– ΒΌ teaspoon pepper

– 2 large eggs, lightly beaten

– ΒΎ cup heavy cream

– Vegetable oil for frying

– Sliced scallions for garnish

– Sour cream or garlic aioli for serving

Instructions

1-First, in a large bowl, combine the corn kernels, flour, sugar, baking powder, salt, and pepper.

2-Next, mix in the eggs and heavy cream until everything is fully incorporated for a smooth batter.

3-Then, heat vegetable oil in a large sautΓ© pan over medium-high heat.

4-Use a spoon to drop 2 to 3 tablespoon portions of the batter into the pan, gently flattening them into round shapes.

5-Fry for 2 to 3 minutes on the first side, then flip and cook for an additional 3 minutes until golden brown and fully cooked.

6-Remove the fritters to a plate lined with paper towels and season them right away with salt.

7-Continue frying the remaining batter, adding more oil to the pan as necessary. Top with sliced scallions and serve alongside sour cream or garlic aioli for dipping.
