Ingredients

– 1 1/2 cups graham cracker crumbs or digestive biscuits (180 grams)

– 1/4 cup brown sugar (55 grams)

– 6 tablespoons unsalted butter, melted (85 grams)

– 907 grams cream cheese, softened

– 1 1/3 cups granulated sugar (266 grams)

– 2 vanilla bean pods or 1 tablespoon vanilla bean paste

– 1/2 cup sour cream (120 grams)

– 4 large eggs, room temperature

– 1/2 tablespoon vanilla extract

– 1/2 teaspoon salt

– 1/4 cup granulated sugar (50 grams)

Instructions

1-Preheat oven to 325°F (165°C). Process graham crackers into fine crumbs, mix with brown sugar and melted butter, and press into an 8 or 9-inch springform pan. Bake for 10 minutes, cool, and grease the sides.

2-Beat cream cheese until creamy, add granulated sugar and vanilla bean seeds, then mix in sour cream.

3-Add eggs one at a time without overmixing, then briefly mix in vanilla extract and salt.

4-Pour batter over the crust, wrap the pan in foil, and place in a water bath.

5-Bake for 60-75 minutes, cool in the oven for an hour, then refrigerate for at least 6 hours.

6-Before serving, sprinkle sugar on top and caramelize with a kitchen torch.
