1 pinch of salt

14.1 ounces (400 g) dark chocolate (55-65% cocoa, melted and tempered)

3 tablespoons chopped pistachios for decoration

Instructions

1-First Step: Prepare all ingredients by chopping dates and nuts finely to ensure even mixing. In this case, chop kataifi pastry into smaller pieces about 1 inch in length and separate strands by fluffing with hands.

2-Second Step: Melt the dark chocolate gently using a double boiler or microwave, stirring frequently to avoid burning. For the white chocolate, melt it (and oil if using) in a heatproof bowl.

3-Third Step: In a mixing bowl, combine crushed nuts, cocoa powder, ground cardamom, and chopped dates. Here, stir in pistachio butter and salt into the melted white chocolate; mix well and cool completely.

4-Fourth Step: Pour the melted chocolate over the dry mixture and stir thoroughly until well incorporated. Add toasted kataifi to the pistachio cream mixture and mix evenly; refrigerate if the mixture is runny.
