🌢️ Chicken Fajita Casserole combines shredded chicken, flavorful peppers, and melted cheese for a hearty and delicious Tex-Mex inspired meal.
πŸ§€ This easy-to-make casserole uses simple ingredients like instant rice and fajita seasoning to deliver bold flavors perfect for family dinners or busy weeknights.

  • Total Time: 55 minutes
  • Yield: 8 servings

Ingredients

– 4 cups shredded cooked chicken (approximately 2 large breasts)

– 2 cups instant rice

– 1 (10.5-ounce) can cream of chicken soup

– 1 cup sour cream

– 1 cup frozen diced onion and bell pepper blend

– 1 (10-ounce) can diced tomatoes with chilies (undrained)

– 1 1/2 cups chicken broth

– 1 (1.12-ounce) packet fajita seasoning

– 1 (8-ounce) package shredded cheese (around 2 cups, such as a Mexican blend)

Instructions

1-Start: Start by preheating your oven to 350Β°F and lightly spraying a 9Γ—13 inch baking dish with nonstick cooking spray. In a large bowl, mix together the shredded chicken, uncooked instant rice, cream of chicken soup, sour cream, frozen onion and bell pepper blend, undrained diced tomatoes with chilies, chicken broth, fajita seasoning, and half the cheese. Once everything’s well combined, pour the mixture evenly into the prepared dish and cover tightly with aluminum foil.

2-Next: Next, pop it in the oven and bake for 35 to 45 minutes, or until the rice is tender. This is where the magic happens, as the flavors meld together into that hearty, comforting meal we all love. After baking, remove the dish from the oven, top with the remaining cheese, and return it to the oven just until the cheese melts for a gooey, irresistible finish.
