  • Total Time: 2 hours 5 minutes

Ingredients

– 16 ounces sour cream forms the creamy base

– 2 tablespoons homemade ranch seasoning or one 1-ounce packet of store-bought ranch mix adds the classic ranch flavor

– 1 can (15 ounces) sweet corn, preferably no-salt-added brings sweetness and texture

– 1 can (15 ounces) black beans, drained and rinsed, preferably no-salt-added provides protein and heartiness

– 1 can (10 ounces) diced tomatoes with green chiles, drained, preferably no-salt-added infuses a spicy kick

– 1 cup shredded sharp cheddar cheese melts in for extra creaminess

– ΒΌ cup cooked and finely crumbled bacon or bacon bits (optional) adds smokiness if desired

– Salt and pepper to taste adjusts seasoning to your preference

Instructions

1-Gather all ingredients and measure accurately. Make sure to drain and rinse the canned items for the best texture.

2-In a large bowl, combine the sour cream with the ranch seasoning and stir until smooth.

3-Add the sweet corn, black beans, diced tomatoes with green chiles, and shredded sharp cheddar cheese to the mix.

4-If using, fold in the crumbled bacon bits for that extra smokiness.

5-Taste and adjust with salt and pepper as needed, then cover and chill for at least 1-2 hours to let the tastes blend.

6-Serve it cold with corn chips, tortilla chips, or fresh veggies like sliced bell peppers for a healthy twist.
