– 1/4 cup unsulphured molasses
– 2 1/2 cups all-purpose flour
– 2 teaspoons baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon (increase to 2 teaspoons for stronger flavor)
– 1/2 teaspoon dried ground ginger (increase to 1-2 teaspoons for stronger flavor)
– Optional: granulated sugar for rolling dough balls
Instructions
1-Preheat oven to 350ยฐF (175ยฐC).
2-Beat softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
3-Add the large egg and unsulphured molasses; mix well.
4-In a separate bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and dried ground ginger.
5-Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
6-Form dough into balls slightly smaller than a golf ball. Optionally, roll each ball in granulated sugar.
7-Place dough balls 2-3 inches apart on a baking sheet.
8-Bake for 10-12 minutes.
9-Remove from oven and let cookies cool on the baking sheet for about 10 minutes.
10-Transfer cookies to a wire rack to cool completely.
