Ingredients

– 2 slices sourdough bread, 1.3 1.5 cm thick

– 30g (2 tbsp) salted butter for spreading

– 1/3 cup (heaped) vintage cheddar cheese or gruyere, freshly grated

– 30g (1/3 cup) mozzarella, freshly grated

Instructions

1-Butter both sides of each bread slice, including all four edges, for that ultimate crispy finish oh, you’ll thank me later!

2-Heat a heavy-based skillet or non-stick frying pan over medium-low heat with no added oil or butter to get everything just right.

3-Place the bread slices in the skillet and lightly toast for 1 minute to warm them up and build a light crust it’s like giving your sandwich a head start!

4-Flip one slice and pile on the cheddar or gruyere cheese, then add the mozzarella on top for that stretchy goodness we all love.

5-Place the other slice of bread on top, with the hot toasted side touching the cheese to help it melt perfectly.

6-Cook for 3 minutes, pressing lightly with a spatula until the bread turns an even deep golden brown hey, if it’s browning too fast, just pull the pan off the heat for a sec and turn it down.

7-Flip the sandwich and cook for another 3 minutes until it’s golden all over and the cheese is fully melted now that’s what I call sandwich perfection!

8-Transfer to a cutting board, cut it in half with a quick motion, and serve it right away while it’s hot and gooey.
