Ingredients
– 2 lb (1 kg) boneless skinless chicken thigh fillets
– 3 large garlic cloves, minced (about 3 tsp)
– 1 tbsp white wine vinegar (or red wine or apple cider vinegar)
– 3 tbsp lemon juice
– 1 tbsp extra virgin olive oil
– 3 tbsp full-fat Greek yogurt
– 1 1/2 tbsp dried oregano
– 1 tsp salt
– Black pepper to taste
– 2 cucumbers (to yield about 1/2 to 3/4 cup grated after removing juice)
– 1 1/4 cups full-fat Greek yogurt
– 1 tbsp lemon juice
– 1 tbsp extra virgin olive oil (or more for richer taste)
– 1 garlic clove, minced
– 1/4 tsp salt
– Black pepper to taste
– 3 tomatoes, deseeded and diced
– 3 cucumbers, diced
– 1/2 red Spanish onion, peeled and finely chopped
– 1/4 cup fresh parsley leaves (optional)
– Salt and pepper to taste
– 4 to 6 pita breads or flatbreads
Instructions
1-Mix all marinade ingredients in a large ziplock bag and massage to combine. That yogurt tenderizes and flavors the chicken deeply, folks!
2-Add chicken thigh fillets, coat thoroughly and marinate for a minimum of 2 hours, preferably 3 hours and up to 12 hours, but no longer than 24 hours.
3-Prepare the tzatziki sauce by scraping seeds from cucumbers, grating and squeezing out excess liquid. Combine grated cucumber with yogurt, lemon juice, olive oil, minced garlic, salt, and pepper. Let it sit for at least 20 minutes. Squeezing the liquid is key for perfect texture!
4-Mix salad ingredients in a bowl. Easy peasy.
5-Preheat a grill or heat 1 tbsp oil in a frying pan over medium-high heat. Works indoors or outdoors, depending on the season.
6-Remove chicken from marinade and cook for 2 to 3 minutes on each side until golden and cooked through.
7-Remove cooked chicken and rest covered loosely for 5 minutes. This keeps it juicy.
8-To assemble gyros, place salad on warmed pita or flatbread, add chicken, top with tzatziki, then roll and secure with parchment paper or foil. Boom, gyro perfection!
