– 8 ounces mushrooms, sliced or quartered
– 1/2 large yellow onion, chopped
– 3 tablespoons coconut aminos (or tamari/soy sauce)
– 1 teaspoon minced garlic
– 1 teaspoon minced fresh ginger
– 1 teaspoon sriracha
– 1 teaspoon rice vinegar
– 1 tablespoon toasted sesame oil
– 1 1/2 tablespoons maple syrup
– 2 tablespoons water
– 1 tablespoon arrowroot powder (or tapioca starch/cornstarch)
– Sesame seeds
– Chopped scallions
Instructions
1-Brown 1 pound ground beef in a skillet over medium-high heat and set aside.
2-Heat 1 tablespoon extra virgin olive oil and sautΓ© 1 red bell pepper, 1 large carrot, 1/2 pound asparagus, 8 ounces mushrooms, and 1/2 large yellow onion for 5 minutes.
3-Whisk together 3 tablespoons coconut aminos, 1 teaspoon minced garlic, 1 teaspoon minced ginger, 1 teaspoon sriracha, 1 teaspoon rice vinegar, 1 tablespoon toasted sesame oil, 1 1/2 tablespoons maple syrup, 2 tablespoons water, and 1 tablespoon arrowroot powder.
4-Add beef back to the skillet, pour in sauce, and toss to coat.
5-Garnish with sesame seeds and chopped scallions.
6-Serve over rice or in lettuce cups.
