  • Total Time: 1 hour 40 minutes
  • Yield: 6-8 servings 1x

Ingredients

Scale

2 tsp (7g) dried yeast for forming the base of the bread

1 cup (250ml) lukewarm water for forming the base of the bread

400g plain flour, plus extra for dusting for forming the base of the bread

2 tsp salt for forming the base of the bread

3 tbsp olive oil for forming the base of the bread

200g cheese (such as mozzarella) for adding flavor and moisture

150g finely diced ham for adding flavor and moisture

β…“ cup (80g) drained canned pineapple chunks, finely diced for adding flavor and moisture

1 tbsp pizza sauce for adding flavor and moisture

Instructions

1-Creating this Hawaiian ham and pineapple monkey bread is a fun process that starts with simple steps for the dough. Begin by mixing the yeast with lukewarm water and letting it stand until bubbles form, which usually takes a few minutes. This activates the yeast and sets the foundation for a soft, airy bread.

2-Next, combine the flour and salt in a bowl, making a well in the center for the yeast mixture and olive oil. Mix by hand until the dough is smooth, then knead it on a floured surface for a few minutes to develop its texture. Place the dough in an oiled bowl, cover it, and let it rise in a warm place for about 30 minutes or until it doubles in size.

3-Once risen, preheat your oven to 200Β°C (180Β°C fan-forced) and line a baking tray. Turn the dough onto a floured surface and knead gently for 5 minutes. Roll it into a 20cm disc, add half the cheese, ham, and pineapple, then fold over and knead to combine everything evenly.

4-Shaping and Baking the Bread After combining the fillings, cut the dough into halves and roll each into 3cm thick logs. Divide each log into 12 pieces and shape them into balls, arranging them in a spiral on the tray starting at the center. Cover with a tea towel and let them rise for another 30 minutes until doubled.

5-Brush the dough with pizza sauce and scatter the remaining ham and pineapple on top for that final flavor burst. Bake for 15 minutes, then remove and sprinkle with the remaining cheese. Return to the oven for another 10 minutes until the cheese melts and the bread is fully cooked. Let it stand for 5 minutes before serving to ensure it’s easy to pull apart.
