– 1/2 cup powdered sugar, sifted if lumpy
– 1/2 cup chocolate chips
– 3/4 teaspoon salt
– 2 eggs
– 1/2 cup oil (canola oil recommended; olive oil optional for richer flavor)
– 2 tablespoons water
– 1/2 teaspoon vanilla extract
Instructions
1-Preheat oven to 325ยฐF (163ยฐC). Lightly spray an 8×8 inch baking pan and line it with parchment paper, then spray the parchment as well.
2-In a medium bowl, combine granulated sugar, flour, cocoa powder, powdered sugar, chocolate chips, and salt.
3-In a large bowl, whisk together eggs, oil, water, and vanilla extract.
4-Sprinkle the dry ingredients over the wet mixture and stir until just combined; the batter will be thick.
5-Pour the batter into the prepared pan and smooth the top with a spatula.
6-Bake for 40 to 48 minutes, or until a toothpick inserted comes out with a few crumbs attached. It’s better to remove early to avoid overbaking.
7-Allow brownies to cool completely, about 2 hours, before slicing to improve texture and flavor.
