Ingredients

– 10-Bone Frenched Pork Rack (8 lbs)

– 3/4 cup Kosher Salt for the seasoning blend

– 1/2 cup Whole Grain Mustard for the basting liquid

– 1/2 cup Wildflower Honey for the basting liquid

– 1/2 cup Rosemary for the basting liquid

– 1 cup Parsley for the basting liquid

– 1/4 cup Paprika for the basting liquid

– 1/4 cup Minced Garlic for the basting liquid

– 3 bunches Broccolini for the side

– 1/4 cup Extra Virgin Olive Oil for the broccolini

– Heavy pinch Kosher Salt for the broccolini

– Heavy pinch Black Pepper for the broccolini

Instructions

1-Start: by preheating the grill with a heat diffuser to 250ยฐF for indirect cooking, which helps achieve even results. Season the 10-bone frenched pork rack generously with the provided seasoning blend and let it sit at room temperature for at least 1 hour to enhance flavor absorption.

2-Once ready, place the pork on the grill and cook at 250ยฐF until it reaches an internal temperature of 140ยฐF. At this point, remove the heat diffuser and crank up the heat to about 400ยฐF for a nice char.

3-Mix together the butter, whole grain mustard, wildflower honey, rosemary, parsley, paprika, and minced garlic to form the basting liquid, then brush it over the pork. Return the pork to the grill to crisp the outside, glaze it again, and cover with foil to rest for 15 minutes before slicing for maximum juiciness.

4-For the broccolini, toss 3 bunches with 1/4 cup extra virgin olive oil and a heavy pinch each of kosher salt and black pepper, then grill for about 6 minutes. Finally, slice the pork, add another brush of glaze, and serve it with the broccolini for a complete meal.
