3-Mix and coat: In a bowl, combine 2 tablespoons olive oil, 2 tablespoons honey, salt, and pepper. Pour the mixture over the carrots and toss them evenly to coat.

4-Roast the carrots: Roast the carrots for 25 to 35 minutes, depending on their size, until they are tender and browned. Stir halfway through for even cooking.
