Ingredients

– 1 cup flour

– 1 cup cornmeal

– 1 teaspoon baking powder

– 1 teaspoon salt

– ½ cup melted and slightly cooled butter

– ½ cup sugar

– 1 egg

– 1 cup buttermilk

– 8 ounces sharp white cheddar, freshly grated

– ⅔ cup chopped pickled jalapeños

Instructions

1-First, preheat your oven to 375 degrees F and spray a 9×9 inch pan with nonstick baking spray. In a small bowl, whisk together 1 cup flour, 1 cup cornmeal, 1 teaspoon baking powder, ½ teaspoon baking soda, and 1 teaspoon salt.

2-In a large bowl, whisk the ½ cup melted and slightly cooled butter with ½ cup sugar, then whisk in 1 egg and 1 cup buttermilk.

3-Add the dry ingredients to the wet mixture and mix until just combined to keep the batter light. Stir in 8 ounces of freshly grated sharp white cheddar and ⅔ cup chopped pickled jalapeños for that spicy kick.

4-Spread the batter evenly in the prepared pan and bake for 20 to 25 minutes, or until it is set and golden on top, then let it cool slightly before serving.
