πŸ₯— Ready in just 10 minutes, it’s an easy and creamy salad perfect to brighten up any meal.

  • Total Time: 10 minutes
  • Yield: 6 servings

Ingredients

– 8 cups shredded Napa or green cabbage

– 3 ears fresh corn (about 2 cups)

– 1/2 large jalapeno, minced (about 1/4 cup)

– 1/2 bunch fresh cilantro, chopped small (about 1/2 cup)

– 2 green onions, sliced thin (about 1/4 cup)

– 3/4 cup mayonnaise

– 3 tablespoons sugar

– 2 tablespoons Dijon mustard

– 2 tablespoons fresh lime juice

– 1 teaspoon celery seeds

– 1/2 teaspoon kosher salt

Instructions

1-First, combine 8 cups of shredded Napa or green cabbage, 3 ears of fresh corn (about 2 cups), 1/2 large minced jalapeno (about 1/4 cup), 1/2 bunch of chopped fresh cilantro (about 1/2 cup), and 2 green onions sliced thin (about 1/4 cup) in a large mixing bowl. For a tip on slicing corn off the cob without mess, place the cob flat on your cutting board and slice downward.

2-Next, in a smaller bowl, whisk together 3/4 cup mayonnaise, 3 tablespoons sugar, 2 tablespoons Dijon mustard, 2 tablespoons fresh lime juice, 1 teaspoon celery seeds, and 1/2 teaspoon kosher salt to create the dressing.

3-Pour the dressing over the cabbage mixture and toss everything well to coat evenly, adjusting the spice by varying the jalapeno amount if needed. Modify sweetness by adding or reducing sugar based on your taste. Serve immediately for the best texture, pairing it with dishes like fish tacos or grilled salmon for a complete meal.
