– 2 jalapenos, sliced lengthwise with seeds and membranes removed
– 4 ounces cream cheese
– 4 slices crispy cooked bacon
– 2 slices Monterey Jack cheese
– 2 slices sharp cheddar cheese
– 4 slices Italian bread or thick bakery-style white bread
– Chopped cilantro (optional)
– Pats of butter for grilling
Instructions
1-First, preheat the oven to 375 degrees Fahrenheit. Stuff each jalapeno half with about 1 ounce of cream cheese and bake on a baking sheet for 25-30 minutes until the peppers are semi-soft and the cheese is bubbly. Once ready, slice the baked stuffed jalapenos into bite-sized pieces.
2-Next, place one slice of sharp cheddar cheese on two of the bread slices and one slice of Monterey Jack cheese on the other two slices. Divide the jalapeno pieces between the bread slices with cheddar cheese. Add the 4 slices of crispy cooked bacon to the bread slices with Monterey Jack cheese, and optionally, add chopped cilantro to one side.
3-Then, assemble the sandwiches by combining the corresponding bread slices. Top each sandwich with several pats of butter and grill in a skillet over medium-low heat until the bread is lightly browned and the cheese is melted. The total preparation time is about 10 minutes of prep and around 30 minutes of cooking.
