Ingredients
1 cup room temperature water
2–3 large ice cubes
1 cup water
2 tablespoons green tea leaves (such as non-bitter varieties)
2 star anise
6–8 green cardamom pods
2 whole cloves (optional)
1 cinnamon stick (optional)
1/8 teaspoon heaped baking soda
1 cup whole milk
1/2 cup half and half (adjust with milk for lighter or richer texture)
1/4 teaspoon kosher salt (adjust to taste)
2 to 2.5 tablespoons sweetener of choice (such as cane sugar, brown sugar, or date syrup)
1/2 to 1 tablespoon raw almonds, crushed
1/2 tablespoon unsalted pistachios, crushed
Instructions
1-Prepare the ice water: by combining 1 cup room temperature water with 2-3 large ice cubes and set aside.
2-In a medium saucepan, heat 1 cup water along with 2 tablespoons green tea leaves, 2 star anise, 6-8 green cardamom pods, 2 whole cloves (if using), and 1 cinnamon stick (if using) over high heat until it boils.
3-Add 1/8 teaspoon heaped baking soda to the boiling mixture; it will fizz. Continue boiling on high for 5-6 minutes, aerating the tea occasionally by ladling and pouring it back. The color should change from pale green to deep pink. If needed, add an additional 1/8 teaspoon baking soda.
4-Add the prepared ice water (without the ice cubes) to the tea and aerate if desired to enhance the pink color.
5-Stir in 1 cup whole milk, 1/2 cup half and half, 1/4 teaspoon kosher salt, and 2 to 2.5 tablespoons sweetener. Bring to a light boil, then immediately turn off the heat to maintain the pink color.
6-Taste and adjust the salt and sweetener as needed.
7-Strain the tea into cups and garnish with 1/2 to 1 tablespoon crushed raw almonds and 1/2 tablespoon crushed unsalted pistachios if desired.
