Instructions

1-Preheat and Prep: Set your oven to 325Β°F (163Β°C). Grease and flour two 9×5-inch loaf pans.

2-Dry Ingredients: In one bowl, whisk 3 cups all-purpose flour, 1 teaspoon salt, 1 teaspoon baking soda, and 1 teaspoon baking powder.

3-Wet Mix: In a large bowl, rub 2 cups granulated sugar with zest of 2 large lemons until fragrant. Add 3 large eggs, 1 cup light olive oil, 1 tablespoon fresh lemon juice, and 1 1/2 teaspoons vanilla extract. Stir until smooth.

4-Combine: Gently mix dry into wet until just combined. Fold in 2 cups grated zucchini carefully.

5-Fill Pans: Divide batter evenly into the prepared pans. Smooth the tops.

6-Bake: Bake 60-65 minutes, until a tester inserted in the center comes out clean.
