๐Ÿง€ This recipe is perfect as a hearty appetizer or snack that combines sweetness with rich, satisfying toppings.

  • Total Time: 1 hour 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

4 medium sweet potatoes the base for the skins, providing natural sweetness and nutrients

1 tablespoon olive oil used to crisp up the skins and enhance flavor

1/4 cup milk (such as buttermilk, whole milk, or half-and-half) adds creaminess to the mashed filling

1/4 teaspoon salt for seasoning the mash to bring out the flavors

Ground black pepper to taste provides a subtle kick and balances the sweetness

1 cup shredded cheese (a mix of sharp cheddar and mozzarella is suggested) tops the skins for a melty, savory finish

4 strips bacon, cooked until crispy and crumbled adds a smoky, crunchy texture

sour cream offers a tangy creaminess (optional)

chopped chives provides a fresh, mild onion flavor (optional)

Instructions

1-First, preheat the oven to 400ยฐF (204ยฐC). Wash the sweet potatoes thoroughly and pierce each several times with a fork for even cooking.

2-Bake the sweet potatoes for 40 to 50 minutes until tender. Allow them to cool slightly, then slice them lengthwise.

3-Reduce the oven temperature to 375ยฐF (191ยฐC). Carefully scoop out the flesh, leaving a thin layer inside the skins to keep them sturdy.

4-Place the skins skin-side down on a baking sheet, drizzle with 1 tablespoon olive oil, and bake for 10 minutes to crisp up.

5-Mash the scooped-out sweet potato flesh with 1/4 cup milk, 1/4 teaspoon salt, and ground black pepper to taste until smooth and creamy.

6-Fill each skin with the mashed mixture and top with 1 cup shredded cheese. Bake for an additional 15 minutes until the cheese has melted.

7-Remove from the oven, sprinkle with the crumbled bacon, and serve with sour cream and chopped chives if desired.
