2-Next: reduce the oven temperature to 375Β°F (191Β°C). Place the skins on a baking sheet with the cut side down, drizzle with 1 tablespoon olive oil, and bake for 10 minutes. While thatβs happening, mash the scooped-out flesh with 1/4 cup milk, 1/4 teaspoon salt, and ground black pepper to taste until itβs smooth.
3-After the initial bake, fill each skin with the mashed mixture and top with 1 cup shredded cheese (half sharp cheddar and half mozzarella). Bake for another 15 minutes until the cheese melts perfectly. Finally, add the crumbled 4 strips bacon and serve with sour cream and chopped chives.
