Ingredients

– 2 lbs (about 900 g) ground beef, 80% or 85% lean

– 1 medium onion, finely chopped (about 1 cup)

– 1 teaspoon salt

– 2 large eggs

– 3 garlic cloves, minced

– 2 tablespoons ketchup

– 3 tablespoons fresh parsley, finely chopped

– 3/4 cup Panko breadcrumbs or gluten-free breadcrumbs

– 1/3 cup milk

– 1 teaspoon Italian seasoning (or to taste)

– 1 teaspoon black pepper

– 3/4 cup ketchup

– 1 1/2 teaspoons white vinegar

– 2 tablespoons brown sugar

– 1/2 teaspoon garlic powder

– 1/2 teaspoon onion powder

Instructions

1-Preheat the oven: Preheat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or foil for easy cleanup.

2-Sâuté the chopped onion: Sâuté the chopped onion in 1 teaspoon oil over medium heat until softened and golden, about 5 to 7 minutes, then set aside to cool.

3-Mix the meatloaf ingredients: In a large bowl, gently mix the ground beef with the sâutéed onion, salt, eggs, garlic, ketchup, parsley, breadcrumbs, milk, Italian seasoning, and black pepper until just combined.

4-Shape the meatloaf: Shape the mixture into a loaf approximately 8 inches long, 4 inches wide, and 3 inches tall on the prepared baking sheet.

5-Bake the meatloaf: Bake the meatloaf uncovered for 40 minutes.

6-Prepare the glaze: Meanwhile, prepare the glaze by mixing ketchup, white vinegar, brown sugar, garlic powder, and onion powder in a small bowl.

7-Glaze and finish baking: Spread the glaze evenly over the meatloaf and bake for another 20 minutes or until the internal temperature reaches 160°F (71°C).

8-Rest the meatloaf: Allow the meatloaf to rest for 10 to 15 minutes before slicing to let the juices redistribute for better texture and easier cutting.
