2 cups shredded cheese blend, divided
2 8.5 oz. boxes corn muffin mix
2 eggs
2/3 cup milk
Instructions
1-First: preheat the oven to 400 degrees and grease a 9Γ13 casserole dish with nonstick cooking spray to avoid sticking.
2-Next: brown the 1 pound lean ground beef over medium-high heat; when itβs half cooked, add the 1 cup chopped onions and cook until the meat is no longer pink.
3-Then: drain the meat mixture before stirring in the 1 taco seasoning packet, 1 11 oz. can of corn (drained), 1 14.75 oz. can cream-style corn, 1 10 oz. can diced tomatoes with chiles, 1 teaspoon salt, and 1/2 teaspoon black pepper.
4-Simmer: this over low to medium heat for five minutes, stirring occasionally to thicken it up.
5-Pour: the mixture into your prepared dish and top with 1 cup of the shredded cheese blend.
6-In another bowl: whisk together the 2 eggs and 2/3 cup milk, then stir in the 2 8.5 oz. boxes corn muffin mix to make the batter.
7-Spread: this batter evenly over the meat layer and bake for 15-20 minutes until the top turns golden brown.
8-Once out of the oven: sprinkle the remaining 1 cup shredded cheese blend on top and bake for another two minutes until it melts.
9-Let: it rest a bit before serving to set the flavors.
