8 large fresh peaches, peeled and sliced about 1/2 inch thick

1 (3 oz) packet peach-flavored gelatin powder

Instructions
1-Prepare the peaches: Wash, peel, and slice 8 large fresh peaches into 1/2-inch thick pieces. Soak them briefly in lemon water to prevent browning.
2-Make the glaze: In a saucepan, combine 1 cup water, 1 cup granulated sugar, and 3 tablespoons cornstarch. Heat over medium until thickened, then add 1 (3 oz) packet of peach gelatin and stir until dissolved. Cool to room temperature.
3-Assemble the pie: Stir the cooled glaze into the peach slices and pour into the 9-inch baked pie crust.
4-Chill: Place the pie on a baking sheet to catch any overflow and refrigerate for at least 4 hours or overnight.
5-Prepare the topping: Whip 1 cup heavy whipping cream with 1 teaspoon vanilla extract and 3 tablespoons confectioners’ sugar until stiff, then spread or dollop on top. Garnish with fresh peach slices and mint if desired.
