1 large egg, at room temperature

1 teaspoon vanilla extract

1 cup (120g) all-purpose flour or 1/2 cup (57g) whole wheat flour or 1/2 cup (45g) old-fashioned rolled oats

2 teaspoons cinnamon

1/2 teaspoon baking powder

1/2 teaspoon table salt

2/3 cup (113g) raisins, packed

1/2 cup (57g) confectioners’ sugar, sifted if lumpy

2 to 3 teaspoons warm water

Instructions

1-Preheat your oven and prepare the pan: Start by preheating your oven to 350Β°F and lining an 8-inch square pan with parchment paper for easy removal.

2-Mix the wet ingredients: In a medium bowl, whisk the brown sugar, butter, and molasses until well combined to form a smooth base.

3-Add egg and vanilla: Next, add the egg and vanilla extract, whisking until everything mixes together evenly.

4-Combine dry ingredients: Then, incorporate the flour (or oats), cinnamon, baking powder, and salt using a flexible spatula until no dry spots remain.

5-Stir in raisins and spread batter: Stir in the raisins to distribute them throughout the mixture, then spread it evenly in the prepared pan.

6-Bake and cool: Bake for 25 to 30 minutes until the bars are evenly browned and set in the center, or use a thermometer to check for 205Β°F. Let them cool slightly in the pan before moving to a wire rack.
