πŸͺ These Oreo Cheesecake Bars combine a rich, creamy filling with a crunchy chocolate sandwich cookie crust for a decadent dessert.
🍰 Perfect for special occasions or an indulgent treat, they are easy to prepare and loved by all cheesecake fans.

  • Total Time: 5 hours
  • Yield: 12 to 16 bars

Ingredients

– 19.1 oz package chocolate sandwich cookies (regular) for the crust

– 1/4 cup (1/2 stick) salted butter, melted to bind the crust

– 3 (8 oz) packages cream cheese, softened for the creamy filling

– 3/4 cup granulated sugar to sweeten the mixture evenly

– 3/4 cup sour cream, room temperature to add creaminess and balance flavors

– 1 teaspoon vanilla extract for enhanced depth of flavor

– 1/2 teaspoon salt to bring out the tastes

– 3 large eggs, room temperature to bind and enrich the filling

– Remaining chocolate sandwich cookies (from the package), roughly chopped to mix into the filling for extra texture

Instructions

1-Place 28 cookies in a food processor and pulse until they’re finely ground, then mix in the melted butter until the crumbs are fully coated.

2-Press this mixture firmly and evenly into the prepared pan, and bake it for 10 minutes before letting it cool on a wire rack.

3-Roughly chop the remaining cookies either by pulsing them a few times in the processor or by hand.

4-In a large bowl, beat the softened cream cheese on medium speed until it’s smooth and creamy, then add the sugar and blend for about 2 minutes, scraping down the sides as needed.

5-Beat in the sour cream, vanilla extract, and salt, making sure to scrape the bowl again for an even mix.

6-Add the eggs one at a time, beating well after each and scraping down the sides to fully combine.

7-Gently fold in the chopped cookies and pour the cream cheese mixture over the crust, smoothing the top for an even bake.

8-Bake for 40 minutes until the filling is slightly wobbly in the middle but set on the edges, then cool on a wire rack for about 1 hour.

9-Finally, chill in the refrigerator for at least 3 hours, lift from the pan using the foil, cut into squares, and keep refrigerated until serving.

Notes

🍰 Bars taste better the day after making; prepare in advance for best flavor.
❄️ Avoid over-mixing to prevent cracks; bake at a moderate temperature to avoid a sunken middle.
πŸ’§ Consider placing the pan on a cookie sheet with water and loosely covering with foil while baking to reduce cracking.
