1-Place 28 cookies in a food processor and pulse until theyβre finely ground, then mix in the melted butter until the crumbs are fully coated.
2-Press this mixture firmly and evenly into the prepared pan, and bake it for 10 minutes before letting it cool on a wire rack.
3-Roughly chop the remaining cookies either by pulsing them a few times in the processor or by hand.
4-In a large bowl, beat the softened cream cheese on medium speed until itβs smooth and creamy, then add the sugar and blend for about 2 minutes, scraping down the sides as needed.
5-Beat in the sour cream, vanilla extract, and salt, making sure to scrape the bowl again for an even mix.
6-Add the eggs one at a time, beating well after each and scraping down the sides to fully combine.
7-Gently fold in the chopped cookies and pour the cream cheese mixture over the crust, smoothing the top for an even bake.
8-Bake for 40 minutes until the filling is slightly wobbly in the middle but set on the edges, then cool on a wire rack for about 1 hour.
9-Finally, chill in the refrigerator for at least 3 hours, lift from the pan using the foil, cut into squares, and keep refrigerated until serving.
