2 tsp olive oil

1 1/2 tbsp brown sugar for the seasoning

1 tsp dried oregano or thyme for the seasoning, or another herb of choice

1/4 tsp garlic powder for the seasoning

1/2 tsp salt for the seasoning

1/2 tsp pepper for the seasoning

Finely chopped parsley optional for garnish, quantity as desired

Instructions

1- Preheat the oven to 425°F (220°C, or 200°C for fan ovens). This high heat helps create a golden, caramelized crust while keeping the inside moist and tender.

2- Pound the chicken breasts to an even thickness of 1.5cm (0.6 inches) at the thickest part, using a rolling pin, meat mallet, or your fist. This step ensures uniform cooking and helps tenderize the meat for better results.

3- Mix all the seasoning ingredients together in a bowl. Combine 1 1/2 tbsp brown sugar, 1 tsp paprika, 1 tsp dried oregano or thyme, 1/4 tsp garlic powder, 1/2 tsp salt, and 1/2 tsp pepper for a flavorful blend.

4- Line a baking tray with foil and baking paper or parchment paper. Place the chicken breasts upside down on the tray, drizzle about 1 tsp of olive oil over each piece, rub it in with your fingers, and sprinkle with the seasoning mixture.

5- Flip the chicken breasts over, drizzle with another 1 tsp of olive oil per piece, rub it in, and sprinkle with more seasoning, ensuring to cover as much of the surface as possible. This double seasoning adds extra flavor and helps lock in juices.
